Homemade pasta recipe: make your own tagliatelle!

Whether you like to cook (or simply to eat), pasta is always a winner! But have you ever tried making your own?

It’s not as hard as it may seem, and we’re here to share a nonna-approved tagliatelle recipe that you can prepare at home (no pasta machine required). It doesn’t require many ingredients; only a bit of patience and practice!

 

Ingredients:

  • 3 eggs

  • 300 grams of all-purpose flour

  • 1 teaspoon olive oil

 

Directions:

  1. Begin with your flour on a large cutting board or clean surface.

  2. Create a well in the flour and crack three eggs in the middle. Gently beat the eggs with a fork, folding in a bit of flour from the sides of the well as you go.

  3. Once the eggs are no longer runny, you can begin to mix the pasta dough by hand. As it becomes more solid, begin to knead the dough evenly, scraping in leftover flour as you work.

  4. You’ll know that your dough is ready when it has a smooth texture and is no longer sticking to your hands!

  5. Place your dough in a bowl and cover with plastic wrap, letting it rest for half an hour.

  6. Once rested, place the dough back on your work surface, and use a rolling pin to stretch it to about 1 millimeter thick. This can take time, so here’s where that patience comes in!

  7. Let the dough rest for another 5-10 minutes, then begin slicing your tagliatelle! The ideal width is about 7 millimeters.

  8. Store your pasta in parchment paper with semolina flour to keep the pieces from sticking together again.

  9. Once you’re ready to cook it, simply boil a large pot of salted water and drop your noodles in. They’ll be perfectly al dente in only about a minute!

  10. Toss with your favorite sauce and serve. Buon appetito! 

 

Serves: 4-5 people

Pro Tip: As a general rule, use 1 egg per 100 grams of flour!
